Recipes, Pork Chops with Orange Cranberry Chutney
Ingredients:

  • 4 boneless lean pork chops about 4 oz each
  • ½ cup fresh cranberries
  • ½ cup Mandarin oranges in their juice (I used one of the small fruit cups I buy for the toddler)
  • ½ tbsp honey
  • ¼ tsp all spice
  • ¼ tsp nutmeg
  • 1 tbsp Balsamic vinegar
  • 1 tbsp apple cider vinegar
  • Salt & Pepper
  • Non-stick cooking spray
Place all berries, oranges, honey and spices together, give nutmeg and vinegar in a saucepan. Bring to a boil and cook for about 5 minutes over high heat. The berries should pop and the body begin to break. Once the color depends, and mixing in a little "let up to a simmer until ready to use.

Although cooking. Season with salt and pepper on both sides of pork. Heat a greased skillet over medium heat and spray.

Add the chops in hot pan and cook about 5-6 minutes per side depending on thickness of chops.

If you have thick chops when cooking, it will help them to cook faster.

Remove chops and garnish with a dollop of cranberry chutney. I was with a side of steamed broccoli and whole wheat spaghetti. The food was great, although I the only person who ate the chutney!
